Our Production Process
Our own and leased farms encompass the entire chamomile production process, which occurs under our direct supervision.

The Drying Sheds
Our traditional drying shed is located in Francisco Madero. We use Don José's original designs, where drying facilities harness natural airflow assisted by mechanical fans, maintaining precise temperature and humidity. Unlike industrial methods, our slow drying system preserves the compounds that give our chamomile its distinctive character.

Processing Equipment
Our processing equipment is largely designed and built by the Mendizábal family. When commercial machines didn't handle our flowers with the necessary delicacy, Don José adapted existing equipment. Our cutting, selection and filtering machines were also designed by the Mendizábal family. Today, Javier continues that tradition of innovation, combining modern engineering with proven designs.

Packaging Area
The final stage of our process is people-centred. Every package is weighed, sealed and inspected by hand. This attention to detail makes production slower, but ensures only perfect products bear the Mendizábal name.
